Sweet bell peppers are on sale right now and gorgeous. With lots of health benefits, you'll get a lot from them. Want a tasty cold weather comfort food that won't pack on pounds? Here's one!
1 lb. extra lean ground turkey, chicken or beef
1/4 Onion finely diced
1/4 -1/3 c. your favorite salsa, you will need a bit more to top each one
1/4 c. crunched corn chips, corn Chex, or rice (cooked)
Ground garlic and salt, 1/4 tsp.
Sliced jalapenos (optional)
Pre-heat oven at 370 degrees.
Prep peppers, place in lightly oiled baking pan. Mix ground meat, onion, salsa, corn chips and garlic salt well. Spoon meat mixture into peppers. Bake for 20-30 minutes. Make sure meat is cooked by slicing center of meat; no pink should show. Put 1-2 T. salsa and jalapenos on top. Bake for another 10 minutes.
Remove from oven and allow to cool somewhat. They will be very hot in the center. Enjoy!
