Char's Tasty Potato Soup

Note: This dish is gluten-free, dairy-free, soy-free, egg-free. Use rice milk in additions instead of almond milk to be tree nut-free. To make nightshade-free, use sweet potatoes instead of white potatoes.

2- 32oz. containers of vegetable broth (I use Simple Truth Organic or Imagine Organic)
3-4 medium potatoes, washed and cubed

1 sweet potato, washed and cubed (you can add 1 more regular potato if you’d prefer) 

½ -1 large red onion (white or yellow are fine, too)

1 Tbsp. olive oil

4-5 strips uncured turkey bacon

1-2 tsp. Herbes De Provence by Spice Islands (If you can’t find it, you can use a blend of rosemary, thyme, sage, garlic powder, salt, and pepper)

1 tsp. cider vinegar (don’t sub white in its place.  It doesn’t taste right.This one adds a richness to the flavor )


  1. Microwave potato cubes on high for 3-4 minutes in microwavable dish. Set aside.
  2. Cook bacon, then chop up. Set aside.
  3. Saute onions in olive oil to carmelize in large pan.
  4. Add broth on medium heat then all other ingredients. 
  5. Bring to a boil, then simmer for 1 hour for spices to infuse the soup ingredients. 

Serves 4-6. Total Calories: 165 for 1 bowl @ 4 servings. Total carbs: 19g Total Fat: 5g Total sodium: 200mg

Optional additions:

  • add ½ cup 40 calorie Almond milk (other milk or milk alternatives may be used, but they change the nutritional counts) Calculate 10 calories per serving, less than 1g fat, 45mg sodium, 1g carbs.

  • Plain yogurt 1 container (check nutritional counts on container and divide by 4)

  • Add mushrooms as desired. Barely changes any of the counts.
